Appearance
This is another pain de mie or sandwich bread, but this one is given to you in a paper bag. The general appearance is good, with three very shallow scores on top (somewhat unusual for a sandwaich bread). Nice color, combination of light honey and darker browns. Many grains visible on top and on the sides. The density of the loaf feels about average. The crust on top is quite hard, which is unexpected (but by no means unwelcome) in this type of bread. The sides and bottom are softer. The outside smell is quite weak, with hints of grain. The bottom smells like hay, which probably means it has fermented a bit. The cut was hard -- the hard crust on top resisted quite a bit, and the bottom unexpectedly offered some resistance too. The crumb looks good, white/grey, fluffy, with many bits of grain visible. The inside smell is quite good, fresh and sweet. Taste
The crust is pretty hard for a bread of this type. Good taste but not great. The side crust tastes of grain and is fairly good too. The crumb is light, with a good mouthfeel and a pleasant taste. Conclusion
Not a bad bread overall, I enjoyed the crumb. The smell of the bottom is definitely a bit earthy, which I don't mind but could be a turnoff for some people. |
