Appearance

This bread comes in a white unmarked paper bag. This is a good-looking loaf, with four handsome scores on top, and a very pleasant golden color. The crust is just a tad shiny.

The density of the bread feels about average, and the crust is quite hard.

The outside smell is a pleasant sourdough.

The cut was a bit difficult because of the hard crust, but on the other hand the same hard crust keeps the loaf from collapsing under the knife, allowing you to make nice-looking slices.

The crumb is white, of average fluffiness, with a few small to medium-sized bubbles.

The inside smell is that of an excellent sourdough.

Taste

The crust has an excellent consistency, and a taste that goes with it. The sour is there, but it's the right kind, enough to tickle you without turning you off.

The crumb also has an excellent consistency, and its taste matches that of the crust. Nice pleasant aftertaste.

Conclusion

This is a very good sourdough. It has the right consistency, and the right taste.
