Appearance

This bread comes in a white paper bag.

It is a nice dark loaf, dark brown, with three scores on top, it looks like it has some soul. Slight flour sprinklings.

The density is slightly above average, the crust is resistant but does give some.

The outside smell is rustic, dark and fulfilling. The bottom has a slightly burnt smell which I don't mind at all.

The cut was easy, the slices look good.

The crumb is quite white, with large bubbles that make it rather fluffy and open.

The inside smell is not strong, it smells fresh.

Taste

The crust is way too soft, as it turns out, I did not like the mouth feel. But the taste is appropriately sour and not bad.

The crumb has an excellent consistency, it is also sour in a good way, it is moist and fairly pleasant.

Conclusion

Obviously, this bread advertizes itself as sour, and it delivers on that promise. The sourness is well done, it's certainly not over the top, and I liked it. However, the crust was just too soft for me, and the overall taste could be a bit better.
