Appearance
This bread comes in a white paper bag. It is an elegant loaf, rather bourgeois and replete. Large single score on top, wide open. Generous flour sprinklings, nice golden color. The density of this bread feels a bit below average. The crust is softer than expected from appearance, except for the ridge which is hard (as it should be). The outside smell is weak but nice and fresh. The bottom smells a bit stale. The cut was not easy, between the hard ridge and the tendency of the loaf to collapse when under the knife. A slicing machine really helps. The crumb is white and of average fluffiness, with a couple of larger bubbles. The crumb smells fresh and good. Taste
The consistency of the crust is OK, a bit dry. It should be harder. The bottom crust was mediocre and somewhat unpleasant. The crumb is fairly good, with an OK consistency. Conclusion
Appearances can be deceiving. This is a very nice-looking loaf, which turns out to be a rather pedestrian bread. |
