Appearance

The bread is given to you in a white paper bag, which seems lightly waxed.

This is a small loaf, with big scores on top making nice ridges. The color is fairly dark brown, pleasing to the eye. A good number of visible walnuts on the surface.

The bread feels dense, and the crust is relatively hard.

The outside smell is weak, with no obvious walnut smell.

The cut is easy except for the bottom, which put up a bit of a fight. The inside is medium grey, of average density, with walnut fragments visible.

The inside smell is a bit sourdoughy, with definite walnuts.

Taste

The consistency of the crust is good, and it has a very good flavor.

The crumb is delicious, with excellent walnut taste, good, clean aftertaste. I really enjoyed that.

Conclusion

Bay Bread is the first bakery to get an unqualified A for a bread. This is really a good bread, I had no hesitation to award it this grade.
