Background

Boudin (pronounced Bo-deen) is of course the most famous bakery in San Francisco, you cannot visit the city without seeing it everywhere.

Appearance

This bread comes in a paper bag with the Boudin logo.

The loaf looks very nice, it is round with a dark color. A few olive bits are apparent at the surface. The top has an interesting circular pattern (see photo), with a bit of flour sprinkling.

The density is average. The crust is hard with hardly any give, the bottom is very dark and looks good.

The smell is of average intensity, a bit of sourdough smell, no trace of olive, though. The bottom has a bit of a burned smell, which is actually not unpleasant.

The cut is a bit hard because of the crust, but the slices come out looking nice. The crumb is attractive, with a few big bubbles, and a number of visible olive bits.

The inside smell is very good, with olives quite present there.

Taste

The taste of the crust is good, with an excellent texture. The taste of the crumb is a good sourdough, with a solid olive flavor. Could use more olives, though, and the olives themselves are not terribly tasty.

Conclusion

This is a very nice bread. I love the texture of the crust, and I wish more bread had the same. Overall, the taste is very pleasant, not perfect but satisfying.
