Appearance
Attractive loaf, with a nice golden color, nice ridges on top, and flour sprinklings to top it all. Bits of rosemary are clearly visible on the surface. The density of the loaf is average, the crust feels a bit soft, otherwise the loaf is resilient. The smell is not strong, it is actually mostly bread with very little rosemary, which is unfortunate. The loaf can be cut with little trouble, even though it feels a bit harder than average. The slices look pretty good. The inside of the bread looks good, the body is attractive with a fair number of rosemary bits visible. The smell is relatively strong, a mixture of dough and rosemary. The potato definitely changes the smell, giving it a lighter flavor. Overall, the smell is actually a bit sour, which is quite fine. Taste
The crust feels OK but not great because it is a tad too soft. The body has a good feel, with a taste above average, but very subtle -- in fact at first I thought there was no taste at all. There is essentially no aftertaste, which is fine. There is very little taste of rosemary. This is somewhat surprising in a rosemary bread. The potato content, however, has a nice effect on the texture and the smell, but of course little effect on the taste. Conclusion
This is far from a bad bread, but it leaves you wishing for more taste. Blandness is probably the top problem here. Otherwise pleasant. |
